Over the last few days, me and my hub have been writing Recipes based on different Countries. On the first day of term 4, we got given the chance to pick a Country out of a hat. Then, we had to make a dish from that Country and bring it to our shared lunch which is happening tomorrow. (Friday 25th October 2019) The Country that I picked out of the hat was: Mexico! I did quite a bit of research on this country and in the end, found a Recipe on how to make "Churro Cupcakes!"
Down below is my Recipe on how to make "Churro Cupcakes!"

Churro Cupcakes:
Ingredients:
(For the Base)
2 1\2 Cups. All Purpose Flour
1 Tsp. Baking Powder
1\2 Tsp. Baking Soda
1\2 Tsp. Salt
3 Large Eggs
2 Cups. Granulated Sugar
1 Cup. Canola Oil
2 Tsp. Vanilla Extract
(For the Icing)
2 Tsp. Vanilla Extract
100g Butter
6 Cups. Powdered Sugar
2 Tsp. Cinnamon
250g. Cream Cheese
Equipment:
Medium Bowl
3 Large Bowls
3 Wooden Spoons
Regular Size Muffin Tins (Add up to 24)
Piping Bag
Electric Mixer
Instructions:
Step 1: Mix flour, baking powder, baking soda and salt into a large mixing bowl, then set
aside.

Step 2: In a large bowl, beat the egg and sugar until thickened.
Step 3: Next add the oil and vanilla extract to the egg and sugar mixture.
Step 4: Then mix until blended.
Step 5: Add the flour mixture, then mix the batter until smooth.
Step 6: Pour into regular size muffin Tins (That add up to 24).
Step 7: Bake for around 18-23 mins and on the heat of 350 Fahrenheit.
Step 8: Cool Completely.
Step 9: Prepare frosting by combining butter, cream cheese and vanilla extract in a large
bowl.
Beat on low speed for around 1 min.

Step 10: Add the powdered sugar and cinnamon.
Step 11: Mix with the electric mixer until smooth, then beat on medium speed for around
1-2 mins or until mixture is light.

Step 12: Grab a spoon and spoon the mixture into a piping bag.
Step 13: Then frost cupcakes as desired.
Step 14: Once done, sprinkle with cinnamon and\or sugar and then enjoy!
